About Shimaya Miso
"Gozen Miso" was named after the miso that was presented to Lord Hachisuka of Tokushima. Shimaya Miso, which continues to preserve its unique flavor, is a long-established miso shop with over 120 years of history, founded in 1899 as a koji shop. Since its founding, the shop has been making miso with care, under the motto of "pursuing quality, not quantity."
Shimaya's Miso
The popular Gozen miso generally has a koji ratio of 110-130% to soybeans, but Shimaya's Gozen miso has a koji ratio of 140-160%, which allows the sweetness of the koji to come out. In addition, the long aging period of six months to a year removes the saltiness and gives it a rich taste, with a wonderful aroma and flavor. Until the steamed rice turns into koji, it is done by hand, the old-fashioned way, rather than relying on machines.
