Shimaya Miso, which continues to preserve its unique flavor, is a long-established miso shop with over 120 years of history, having been founded as a koji shop in 1899.

We know the Hamanoya family very well and empathize with their passion for making miso. Their miso, which reflects their personalities, has become an indispensable part of our daily meals.
Of course, the deliciousness is backed by high-level skill, beginning with the careful production of koji, but the love that Hamanoya has for their miso is apparent, and it makes you an even bigger fan.

Miso, which has been an integral part of Japanese food culture, appears less and less on the dinner table than it used to.
Recently, he has been trying out various things to increase the opportunities to eat miso, such as teaming up with chefs to develop new recipes using miso and collaborating with restaurants in Tokushima to develop menus.
