Cedar barrel brewing

An old cedar barrel that looks as if it might collapse at any moment. However, it is not rotting; important bacteria live symbiotically inside it.

Fermented seasonings such as miso and soy sauce are made with the help of microorganisms such as lactic acid bacteria and yeast. Only by creating an environment where these bacteria can live comfortably can the best flavor be brought out.

To do this, we need not "plastic barrels" but "cedar barrels" that have been used for many years.

Made with domestic ingredients and no additives

The only ingredients are soybeans, wheat, and salt. Because the ingredients are so simple, each one is carefully selected. We use pesticide-free domestic soybeans purchased from contracted farmers, wheat and rice from Tokushima, which is blessed with abundant nature, and salt.
Using these carefully selected ingredients, we put love into every process and spare no effort in preparing our soy sauce.

Hama Shoyu products are highly praised by many culinary professionals for their outstanding quality and flavor.

It is used in famous three-star Michelin restaurants, renowned traditional Japanese restaurants, and even in the dining areas of Japanese airlines. It is not just a seasoning, but is recognized as an important element in bringing out the delicate flavors of dishes.
