This jam is made from non-standard kiwi fruits that are not shipped fresh and are ripened until they are sweet and sour. The sweetness is mellowed by adding sugar beet. The seeds pop and create a fun texture.

The kiwi fruit used as an ingredient is the Hayward variety, which has a good balance of sweetness and sourness. It is grown using the ring-dressing method without the use of plant growth regulators. The ring-dressing method promotes growth by removing the skin of the kiwi vine in ring-shaped pieces. It is labor-intensive and the number of fruits produced is reduced, but the sugar content of each fruit increases.

Why a small village in Tokushima Prefecture?


Matsuyama Oil produces a variety of products, but their "Yuzu Body Lotion" which uses domestically produced yuzu essential oil is particularly popular. However, in recent years, interest in and demand for Japanese citrus fruits, including yuzu, has increased, making the stable supply of yuzu essential oil uncertain. So, through a person who is instructing the 6th industry in local governments across the country, a relationship was formed between Matsuyama Oil and Tokushima Prefecture, and they came across Sanagouchi Village. Tokushima Prefecture is the second largest producer of yuzu in Japan, and the largest producer of sudachi, making it a famous producer of Japanese citrus fruits. Cultivation in the village is particularly thriving.


Circular and sustainable


There is a saying among the Native American Navajo people that "the natural environment is not something we inherit from our ancestors, but something we borrow from our descendants." The water, the soil, the air, the blue of the ocean, the green of the mountains - all of these are assets that must be returned to us later. This way of thinking means that we should respect nature and make careful interventions, and when we do, do so gently and softly. This way of thinking resonates with me.
