Made with 100% domestically produced yuzu and iyokan oranges, this vinegar is a combination of whole-peeled domestic yuzu vinegar (not concentrated or reconstituted) and straight iyokan juice.
You can taste the concentrated acidity of yuzu and the subtle sweetness of iyokan.
Our unique "whole peel" manufacturing method is used. After removing the skin, the fruit is cut in half and then passed through rollers to crush the flesh and extract fresh juice. This skinless pressed juice contains almost no flavonoids or limonoids, which are the source of the bitterness and astringency that comes from the skin. It has a clean mouthfeel. As it is unfiltered, it also contains fiber, giving it a rich, smooth finish.
About Yamagami Fruit and Medicinal Plant Garden

Yamagami Fruit and Herb Garden is a facility operated by Matsuyama Oil & Fat, a Tokyo-based company that has expanded into Tokushima Prefecture. Some may question the company's decision to expand into such a remote location, but Matsuyama Oil & Fat is a company that produces soap and skincare products. While cosmetic ingredients are usually sourced from manufacturers, the company doesn't just source them; it cultivates the plant materials itself and wants to handle everything from processing to quality control.
Why a small village in Tokushima Prefecture?

Matsuyama Oil & Fat produces a variety of products, but their "Yuzu Body Lotion," made with domestically produced yuzu essential oil, is particularly popular. However, in recent years, interest in and demand for Japanese citrus fruits, including yuzu, has increased, making the stable supply of yuzu essential oil uncertain. Matsuyama Oil & Fat then formed a relationship with Tokushima Prefecture through a person who is advising on sixth-sector industrialization in local governments across the country, and this led to the village of Sanagouchi. Tokushima Prefecture is Japan's second-largest producer of yuzu and first-largest producer of sudachi, making it a renowned producer of Japanese citrus fruits. Cultivation in the village is particularly thriving.
Circular and sustainable

There is a saying among the Native American Navajo people that "the natural environment is not something we inherit from our ancestors, but something we borrow from our descendants." The water, soil, air, the blue of the ocean, and the green of the mountains are all assets that must be returned to us in the future. This way of thinking means that we should respect nature and make careful interventions, and when we do, we should do so gently and softly. This way of thinking resonates with me.
