Sea bream miso

They use sweet and rich Gozen miso made from domestically produced rice and soybeans.

About Shimaya Miso
"Gozen Miso" was named after the miso that was presented to Lord Hachisuka of Tokushima. Shimaya Miso, which continues to preserve its unique flavor, is a long-established miso shop with over 120 years of history, founded in 1899 as a koji shop. Since its founding, the shop has been making miso with care, under the motto of "pursuing quality, not quantity."
Shimaya's Miso
The popular Gozen miso generally has a koji ratio of 110-130% to soybeans, but Shimaya Miso's Gozen miso has a koji ratio of 140-160%, which allows the sweetness of the koji to come out. In addition, the long maturation period of six months to a year removes the saltiness and gives it a rich flavor with a wonderful aroma and flavor. Until the steamed rice turns into koji, the process is done by hand, the old-fashioned way, rather than relying on machines.
