A walnut dressing blended with yuko, a legendary citrus fruit with a nationwide market share of no. 1.

Yuko is an essential citrus fruit for high-quality ponzu sauce, but it only plays a supporting role to bring out the flavor of yuzu and sudachi. So the idea was born: "It would be a waste not to make the well-balanced yuko the main ingredient!" and product development began.

We asked Chef Kaito Arikawa, who works as the "official chef" for Japanese cuisine at the ambassador's residence in Paris, to supervise the creation of the sauce base, and although the base was completed, the flavor was still complex and professional, so we made repeated improvements to simplify the ingredients. We also received advice from the president of Suzukiya, a famous supermarket in Hayama, Kanagawa Prefecture, and by adding plenty of walnuts, we were finally able to achieve the ideal flavor. It took about two years to complete, and we are confident in this product.

The mellow acidity of Tokushima-grown yuzu and the richness and aroma of walnuts combine to create a deep and exquisite flavor.
The two-stage flavor of this product, which is rich yet has a refreshing acidity that lingers on your palate, leaves a feeling of breadth in your mouth. The gentle sweetness of the sugar beet and the deep flavor of the garlic and onion also whet your appetite.

Please use it as a versatile seasoning that goes well with any dish.

What is Yuzuka Yuko?

Yuko is a type of fragrant citrus that is thought to have been born from the natural crossing of yuzu and daidai. It is only grown in the mountainous areas of Tokushima Prefecture, and is also known as the "phantom fruit" because of the very limited distribution.

Locals describe it as having "the aroma of yuzu, the sourness of sudachi, and the taste of yukou," and it is characterized by its well-balanced mellow sweetness and sourness. Taking advantage of this characteristic, it has been used as sushi vinegar or ponzu sauce, and has also been buried in the ground in winter to be preserved until spring, when the sourness has subsided and it has been enjoyed as a snack for children.

Furthermore, yuzu juice is said to have excellent antibacterial and bacteriostatic properties, and is expected to be used as a natural food preservative.

Research has also revealed its health benefits, including anti-tumor, anti-diabetic, and anti-obesity effects. Animal experiments have shown that it can help balance the intestinal bacteria that are disrupted by a high-fat diet, reduce substances that cause bad breath, and improve gum health.

For a variety of dishes

You can enjoy a unique and delicious taste by using it as a dipping sauce for pork shabu-shabu or hot pot dishes, or by simply pouring it over salads, steamed vegetables, cold tofu, or fries.
