Sudachi miso
This miso is made with plenty of sudachi peel from Tokushima Prefecture. It is slightly sweet and has a refreshing aroma.
It is recommended not only as a side dish for rice, but also as a filling for hot rice, onigiri, or grilled onigiri.
Plum miso
Soft plum flesh and finely chopped plums. Made with two types of domestically grown plums, the flavor is enhanced by the aroma of bonito and the richness of miso.

Naruto wakame seaweed miso soup
We use sweet and rich Gozen miso made from domestically produced rice and soybeans, and finished with natural dashi, Naruto wakame seaweed, fried tofu, and spring onions.
Just pour in hot water and you'll have a slightly luxurious miso soup.
About Shimaya Miso
"Gozen Miso" was named after the miso that was presented to Lord Hachisuka of Tokushima. Shimaya Miso, which continues to preserve its unique flavor, is a long-established miso shop with over 120 years of history, founded in 1899 as a koji shop. Since its founding, the shop has been making miso with care, under the motto of "pursuing quality, not quantity."
Shimaya's Miso
The popular Gozen miso generally has a koji ratio of 110-130% to soybeans, but Shimaya Miso 's Gozen miso has a koji ratio of 140-160%, which allows the sweetness of the koji to come out. In addition, the long maturation period of six months to a year removes the saltiness and gives it a rich flavor with a wonderful aroma and flavor. Until the steamed rice turns into koji, the process is done by hand, the old-fashioned way, rather than relying on machines.
