Located in the Muroto-Anan Coast Quasi-National Park facing the Kii Channel on the eastern coastline of Tokushima Prefecture, seawater is pumped from Nakabayashi Coast, which the Environment Agency has dubbed "the most beautiful sea in Japan," and is slowly cooked in a traditional iron pot over firewood.
●How salt is made
AWA SEA SALT pumps up seawater from Nakabayashi Beach in Tokushima Prefecture, and slowly concentrates it in a concentration tank over a period of 4-5 days, lowering the salt concentration from 3% to 20%. Then, impurities are precipitated in a tank, and finally, the salt concentration is increased to 34-35% in a salt-baking tank and crystallized.
This is how "Awa Natural Salt" with its natural, mellow flavor is created.
During the finishing stage, we strictly check the quality by using a centrifuge and then inspecting it manually twice to ensure that our salt is safe.
The large-grain coarse salt is cooked in a salt-grilling pot just before it boils, and the salt concentration is adjusted to 25-26%, resulting in a milder salty taste than the small-grain type.
