*Tokiwa Miso
This authentic miso is packed with all the handiwork that has been handed down since the company was founded in 1875. As the product name is the same as the company's original name, "Tokiwa Miso," this miso is representative of Inoue Miso, brewed using ancient traditional techniques and accumulating the "wisdom and ingenuity" of our predecessors who faced miso making with honesty. It is slightly sweet with a refined flavor and umami taste, and has few unnecessary off-flavors, so it is best eaten as is, such as with rice balls or dipped in vegetable sticks. Of course, it is also delicious in miso soup.
* Gozen Nesashi
This miso is made by fermenting Gozen Miso naturally in wooden barrels for over five years. The richness and mellow acidity of the long maturation process is complemented by a crisp aftertaste, giving the miso a deep flavor similar to soy sauce. You can also enjoy the deep richness of the miso when you make it into miso soup. The activity of yeast and enzymes in the miso has calmed down, and it is less affected by heat, so it is useful not only for miso soup but also as a secret seasoning for stews and sauces.
* Sea bream miso
The best miso for side dishes. Made with plenty of wild Naruto sea bream meat and sweetly cooked. Popular with children. Recommended as a filling for onigiri or as a side dish with rice.
