This product combines "whole-peeled Japanese sudachi vinegar" (not concentrated or reduced) with straight Iyokan juice. The sharp sourness of the sudachi is mellowed by the sweetness of the Iyokan.
The manufacturing method is a unique "whole peel scraping" method. After the skin is scraped off, the fruit is cut in half and then passed through rollers to crush the flesh and extract fresh juice. This skinless pressed juice contains almost no flavonoids or limonoids, which are the source of the bitterness and astringency derived from the skin. It has a clean mouthfeel. In addition, because it is unfiltered, it contains fiber and has a rich throat feel.

However, in recent years, interest in and demand for Japanese citrus fruits, including yuzu, has increased, making the stable supply of yuzu essential oil uncertain. So, through a person who is instructing the 6th industry in local governments across the country, a relationship was formed between Matsuyama Oil and Tokushima Prefecture, and they came across Sanagouchi Village. Tokushima Prefecture is the second largest producer of yuzu in Japan, and the largest producer of sudachi, making it a famous producer of Japanese citrus fruits. Cultivation in the village is particularly thriving.
